Cascara (cascara-coffee cherry tea)
Cascara means cover in Spanish. It refers to coffee cherry peel that retains pieces of flesh from the fruit. When the coffee cherry goes through the peeling machine, the skin is separated from the bean and is left to dry in the sun. The drink we get is both sweet and fruity and contains ¼ of the caffeine contained in the bean.
